Let's say a rabbit sees a guy riding a horse and then a bike a day later - will anything click in its head?

depends on the animal, but a rabbit probably can tell the difference

rabbits are fucking stupid. they don't have the abstract reasoning to link horse-riding and bike-riding as conceptually similar.

they might notice “large figure + strange noise + weird silhouette” on both days. either way the scared little fucker is going to think "predator"

rabbits have facial recognition

not to the extent primates do do. it might know "thats the same human from yesterday" based on face, sound, posture, and scent. put that same human in a different context, it might not draw the connection.
