I've seen a number of videos of people using them to make tea and stuff, I'd try it myself but I'd probably fuck it up.

Depends which part you eat, but the flower is quite hard to eat on its own so yes its bitter,
Its quite common here to eat them we even have a recipie for dandelion schnitzel
