That's why I had to precise that it's wheat and gluten protein. I mentioned it because it's cheap and not everyone can always afford to chicken and eggmaxx on top of you being able to make it at home for even cheaper than the in store prices. Well someone who has issues with gluten will abstain from it entirely. Many people are very much tolerant without any issues so these people will not be having digestive problems. Also you are right my bad it's between 25 and 35g which is still very good. Seitan IS cheap if you buy the simpler ones instead of the ones with a shit ton of seasoning to try and replicate the taste of meat as much as possible. And yes making it at home requires some work but as someone who has done it before it ain't a river to cry about when all you have to pay for is flour.Need a lot of work to washing it and also season to add taste.
Also gluten causes a lot of digestive troubles for people, so i'm not even sure if you can digest it properly and absorb the nutrients.
The 75g per 100g is calculated for the dry flour if i remember correctly. So if you mix it with water to create your dough (meaning 2x, 3x water?) you roughly end-up with 30g per 100g.
Also seitan prices are crazy high in my country so i would recommend more canned tunas and canned legumes, legumes who can be fermented into tempeh anyways
