Jews are indeed ethnoreligious groups, but when was ethnicity ever a fixed, immutable concept? Ethnicity is fluid outside of the Anglosphere; people change/changed ethnicities all the times.

A Serb who converts to Islam is not seen as a "Serb". A Croat who becomes Orthodox Christian is not seen as a "Croat". A Bosniak who becomes Catholic is not seen as a "Bosniak". Since these groups do not differ culturally or linguistically, what defines each group is religion.
