i love coffee usually it has no effect on me though but yesterday it was the first time in a while and it felt like i was in fight or flight mode is coffee bad for people?

I don't feel the kick from coffee either, but some can taste very strong, so I prefer a latte.

You build a tolerance to it like you described but i still wouldnt say its necessarily good

Switching between brands often helps with the tolerance.
