Ye closer to pork or chicken rather than beef or a red meat. It had this very nice texture tho!
Have you ever eaten lamb lungs or the trachea? Almost the same texture and taste but I don’t think you have what I’ve eaten in my life is pretty extraordinary

Lamb hearts have almost the same texture as the body of the lung,yet the lungs and trachea are very crunchy. Genuinely if people started putting lungs into barbecue it would be more eaten than sausage
