Boiling does kill some germs in raw milk, but it doesn't make it completely safe, as some toxins and spores aren't destroyed by boiling or the milk may be re-contaminated afterward. Boiling can also break down natural enzymes and alter the taste. Heating to pasteurization level (e.g., 72–75 °C for 15 seconds) scientifically minimizes the risk of bacterial pathogens.
