how come you can eat steak tartare at restaurants, but argue that it is unsafe at home?
 
or you can marinate the meat in something acidic. that's an option. gets rid of salmonella.
 
i'll check the literature but i'm pretty sure foodborne illnesses from eating raw red meat are rare, and of those foodborne illnesses very few are from viruses

because the risk isn't that much to begin with, and is outright negligible if you marinate it in something acidic like i said. not to mention i love being able to tell what i'm biting into was alive at one point

oh i did use my brain. used it to read stable isotope analyses. used it to read about reductions in hominid gut size over time. used it to understand the low activity levels of certain enzymes and optimal foraging data. look at ecological constraints and comparative anatomy.
