Hello,
I have created an account to learn about nutrition. I am convinced that this forum will be one of the keys to learning a lot of things about good nutrition, bad nutrition, advice, etc.
I don’t want to be anorexic, I just want good health and, of course, a better size.
I have some problems with my back and my knees for a moment, so I can’t do any sports except steps...
But I am lost, there are a lot of topics. So I would like to read your advice, pls.

high satiety foods (my favourites are oats and nuts)⭐ and whole foods of course avoid highly processed foods at all costs >_^ have a routine for going to your local market/greengrocers and get good at cooking
 
protien if u eat in cal deficit

First, welcome to the forum.
Second i recommend you to stay active by doing walks and incline walking, alongside proper rehab work for your knees and back.

Third, nutrition is simple. Eat the less refined food possible (allow yourself to drink a diet cola or a snickers time to time) and get your calories from dairy based products, animal meat and organs, fish, fruits, fermented vegetables and honey. You can still eat carbs like potatoes

I've been smoking for a long time, and I'm trying to quit little by little, but it's true that nicotine really suppresses appetite and I miss that… But there are too many downsides: loss of cardio/endurance, yellow teeth, unpleasant smell for a lot of people, etc.

And it’s not really a good impression for a girl, Even if some men find it attractive

I try to do at least 7,000 steps a day (before I used to do twice that, but I didn't have a car, and now having one saves me so much time). Also, I try not to demonize foods, but now I think I don't have a choice but to demonize them if I want to be healthy. Coming from a region in France where butter and cheese are essential to every meal, it's hard to cut them out… I try to find a natural alternative to butter (vegan butter) and limit dairy as much as possible (I only drink plant-based milk). But when it comes to bread (especially in France…), potatoes, pasta, rice… I limit them even more, to the point of trying to stop eating them altogether! At home, we really prioritize fresh, organic, local, homemade food, especially since Covid.

I once read a book about vegetarian eating that said we actually only need about 200g of red meat per week (I think it's the Mediterranean diet), and to get our protein intake from eggs, soy, or peanuts (I'm not a big fan of soy because it's too processed in my opinion). I need to increase my nut consumption it's almost nonexistent…

No sis you can still eat butter and cheese. Saturated fats are good for your hormones production and cheese contains good bacterias for the gut and it is brain protective.

For dairy unless you are lactose intolerant, you can eat dairy-derivated products and whole milk, whole cream without problems.

Also vegan butter you mean the Margarine ? It's a ultra processced fake butter with seed oils they use chemicals to stabilize it. Just stick to coconut oil or ghee for cooking

Sourdough bread and whole grains are fine imo, and potatoes are the best carbs : high in fibers, minerals, good satiety index

I think the red meat scare is coming from processed meat full of nitrites/nitrates. In reality red meat and dairy are protective against cancers. Get your protein from lean meat like chicken, sardines, beans, lentils etc along red meat ofc
Don't rely on nut because they're caloric little bombs
